Flourless Fiber + Beauty Protein Muffins

Flourless Fiber + Beauty Protein Muffins

Muffins get such a bad rap. And to be fair, those oversized coffee shop versions are typically packed with sugar and refined flour, sending you on a blood sugar rollercoaster that ends in you craving more sweets just an hour or two later. Enter these beauties. One serving has 25-30+ grams of protein and 7-10 grams of fiber, with all the gut- and skin-healing benefits of Beauty Protein. They're light and fluffy (see the modifications for a more traditional dense muffin) and endlessly customizable.

Yield: 12 muffins

Serving size: 3-4 muffins

INGREDIENTS:

DRY:

4 scoops Hint of Vanilla or Hint of Chocolate Beauty Protein

1/4 cup powdered peanut butter

1 tablespoon of baking powder

1/2 cup sweetener of choice (coconut sugar, stevia, monkfruit, etc.)

WET:

1 cup unsweetened vanilla almond milk

4 eggs

1/2 cup nondairy yogurt (substitutes: organic full fat greek yogurt or applesauce for light and fluffy, olive oil for more dense/traditional muffin texture.)

ADD-INS:

1/2 cup chopped nuts or chocolate chips

HOW TO:

Mix dry ingredients well until no lumps remain.

Add in wet ingredients and mix until creamy.

Stir in add-ins.

Bake at 350 degrees for 20 minutes.

Let cool in muffin tin 10 minutes before removing.

Best stored in the refrigerator for up to a week, we love them most when slightly chilled and topped with almond butter.

All around super-woman Reese Witherspoon shared her favorite green smoothie recipe, which she has had every single morning for the last 9 years—wow! She also shared that she got the recipe from Kerry Washington, after asking her at an awards show how she got her skin so flawless and glowy. Naturally, we had to give it a try.

Reese's Daily Green Smoothie

Yield: 2 servings

2 heads romaine lettuce (yep, two entire heads!)

1/2 cup spinach

1 apple

1 pear

1 banana

1 whole lemon (she chops the rind off)

1/2 cup coconut water

Optional: 1 tablespoon of almond butter, vanilla protein powder

The verdict: We chose to use the optional add-ins, a little blood-sugar balancing protein and fat to round out all of the delicious fruit. We added organic vanilla protein powder and a tablespoon of almond butter. It was delicious! And felt amazing to consume so many whole vegetables and fruits. Fully committed to keeping this going if we start glowing like Reese and Kerry!

Miranda Kerr's Smoothie Secrets

Miranda Kerr's Smoothie Secrets

When glowy Kora Organics skincare founder and model Miranda Kerr shares her morning routine, we listen. Miranda starts her day with warm water with lemon to enhance cleansing and boost her immunity. And she loves a hydrating smoothie for breakfast. Recently, she shared her two favorite smoothie secret weapons: chaga and banana.

Why add these two to your next smoothie?

Chaga is a highly medicinal mushroom that has been used for centuries to help boost immune health. In addition, it has been shown to fight inflammation in the body, help lower blood sugar levels, and may also lower harmful cholesterol levels.

Bananas are a wholefood-way to add a little sweetness and creamy texture to your smoothie (we love freezing them first!) They're also rich in fiber (resistant starch which is great for gut health) and antioxidants.

Miranda's Superfood Green Smoothie

She's also shared her favorite superfood-packed green smoothie recipe which is absolutely delicious and so hydrating. Give it a try!

INGREDIENTS:

Water from a young fresh coconut (or half a glass of coconut water)

1/2 a glass goat’s or almond milk

1 tablespoon acai powder

1 tablespoon goji berries

1 tablespoon spirulina

1 tablespoon raw cacao powder

tablespoon maca powder

tablespoon chia seeds

tablespoon plant protein powder

tablespoon coconut oil

HOW TO:

Add all ingredients to a high-speed blender and blend slowly, building to high until creamy.

We love it with our plant-based and USDA organic alternative to collagen, Beauty Protein in Hint of Vanilla.
