High Fiber Chocolate Muffins

INGREDIENTS

Dry:

1 1/2 Cups Fine Wheat Bran

1/2 Cup Powdered Peanut Butter

1 Tablespoon Cocoa Powder

1 Tablespoon Baking Powder

Wet:

2 Eggs

1/2 Cup Liquid Egg Whites

1/4 Cup Plain Greek Yogurt

1/4 Cup Unsweetened Applesauce

1 Cup Unsweet Vanilla Almond milk

1/4 – 1/3 cup Granulated Stevia or Monkfruit

Optional: 1/3 cup Dairy-free Chocolate

 

HOW TO:

Preheat oven to 350

Sift together dry ingredients

Whisk in wet ingredients

Stir in chocolate chips

Pour into non-stick or lined muffin tin

Bake at 350 for about 20 minutes

Let cool in tray for 10 minutes before removing
